Chimichurri Sauce

Ingredients
1/2 cup olive oil
2 tablespoons red wine vinegar
1/2 cup parsley or one bunch, finely chopped
3-4 cloves garlic, finely chopped or minced
1 teaspooon smoked paprika
2 red chilies or jalapeños, deseeded and. finely chopped
3/4 teaspoon dried oregano
salt and pepper, to taste
Preparation
Combine all ingredients in a bowl and allow to sit for at least 10 minutes (ideally 2 hours) before using.
