Pancakes have always been a special meal in my family, especially when my dad worked late. My mom, brother, and I would gather around the kitchen, and I’d take charge of making dinner — chocolate chip pancakes. It was my go-to dish, I learned how to make them at a young age, and they became a symbol of family bonding and comfort, always bringing a little extra sweetness to the evening. Now, years later, this simple but delicious recipe still brings back those cozy memories. Here's my easy pancake recipe, along with some tips to make them extra fluffy and perfect every time!

Tips for Perfect Pancakes

  1. Mix-Ins Welcome: Blueberries, chocolate chips, chopped bananas, or even a handful of oats—get creative.

  2. Let the Batter Sit: After mixing the batter, let it rest for 15 - 30 minutes. This helps the flour fully hydrate and gives the baking powder and soda time to activate, making your pancakes fluffier.

  3. Don’t Overmix: Pancake batter should be lumpy! Overmixing develops the gluten and results in tough pancakes, so stir just enough to combine the ingredients.

  4. Use a Medium Heat: Too hot and your pancakes will burn on the outside while staying raw inside. A medium heat gives them enough time to cook evenly.

  5. Grease the Pan Lightly: A little butter or oil is all you need. Too much can make the pancakes greasy and interfere with browning.

  6. Watch for Bubbles: Once bubbles start to form on the surface of your pancakes, it's time to flip them. This ensures they’re cooked enough on the bottom without getting overdone.



Fluffy Old Fashioned Pancakes


These classic pancakes are fluffy, delicious and easy to make from scratch!


Makes: 16–20 pancakes  Prep Time: 30 mins  Cook Time: 15 mins


Ingredients 

  • 3 cups all-purpose flour

  • 4 teaspoons baking powder

  • 1 tsp cinnamon

  • 2 tablespoon white sugar

  • 1/2 teaspoon salt, or more to taste 

  • 2 1/2 cups milk

  • 1 stick butter, melted

  • 3 large egg

  • 1 tablespoon vanilla 


Directions

  1. Sift flour, baking powder, sugar, and salt together in a large bowl, set aside.

  2. In another bowl or a large measuring cup, beat together the milk, eggs, melted butter, and vanilla.

  3. Pour the wet ingredients into the dry and stir gently until just combined. A few lumps are okay.

  4. Heat a lightly oiled griddle or pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake; cook until bubbles form and the edges are dry, about 2 to 3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter.


Freeze the Extras: Let pancakes cool, then bag ‘em up. Reheat in the toaster or in the oven for a weekday treat.


Note: Half all ingredients if you don't want to make such a large batch.
